Curds – 500 gms
Kesar (Saffron) – 5 strands
Powdered Sugar – 200 gms
Pistachio slivers – 1 tsp
First tie up the curds in a cotton cloth tightly and keep it aside for 2 hours to remove all the water. When all the water is removed, the curds can be used for Shrikhand. Now make two pieces of the Bilvifal (Bael fruit) and remove all the pulp from it. Add a few drops of water to the pulp and keep it aside for half an hour. Now remove the seeds from the pulp. Now crush the pulp and elaichi (cardamom) using a mixture. In this pulp add sugar. Mix this pulp with the curds. The Shrikhand is ready. Remove in a bowl and garnish with pistachio slivers.
