Ingredients of Panchkuti (Multigrain) Masala Rotla :

Jav (Barley) flour – 5 tsp

Jowar (Sorghum) flour – 5 tsp

Bajri (Pearl Millet) flour – 5 tsp

Makai (Corn) flour – 5 tsp

Ragi (Nachni/Finger Millet) flour – 5 tsp

Salt – according to taste

Asafoetida

Carrom Seeds (Ajwain)

Ginger – Garlic- Chilly paste

Coriander leaves

Oil

Method: 

Make a paste of 3 green chillies, ginger and 5 to 6 garlic cloves. Now mix all the flours together with the paste. Add a pinch of Ajwain seeds, salt, 1 tspn of oil. Now sprinkle a little oil and mix all this together to make a dough. In a heated tawa, place the rolled out dough. Now garnish with ghee. This Rotla may be served with pickled green chillies, garlic chutney, jaggery and buttermilk.

Instead of consuming just one flour such as wheat or rice, we should consume such multigrain flours for obtaining different nutrients such as proteins and calcium and fibres.

Medicinal/Nutritive value:

Ragi and Bajri are high in calcium while corn and jav are high in fibre content.

 Ingredients of Guava Curry:

Guavas – 4

Red chilli powder

Salt – according to taste

Oil

Garam Masala

Asafoetida

Coriander Leaves

Ginger

Green chillies – 3

Coriander cumin powder

Jaggery

Mustard seeds

Method:

Firstly remember to choose Guavas that are neither too ripe nor too unripe. Wash the guavas and cut them in small pieces. Heat some oil in a kadai. Now add mustard seeds and then the guava pieces. Mix them well. Now make a paste of a small piece of ginger and 3 chopped green chillies.  Add this paste to the cooking guavas. Add salt, red chilly powder, asaofetida, garam masala and coriander cumin powder.  Add a little water and let it cook for 3 minutes. Now ad a piece of jaggery and garnish with finely chopped coriander leaves.

Medicinal/Nutritive value: Guavas are high in Vitamin C content much more than Lemon or Oranges. Its also has a lot of fibre hence is effective in constipation.

Ingredients of Quinoa Kheer :

Quinoa – 25 gms

Milk – 200 ml

Sugar

Powder of 2 Cardamoms

Nutmeg powder – 1

Walnuts – 2

Almonds – 3 to 4

Cashewnuts – 3 to 4

 Method:

First heat the milk. Then once milk comes to a boil and add the Quinoa. Once the Quinoa is cooked add the sugar. Then add cardamom. Add the grated nutmeg and the dry fruits. Let it cook for 2 minutes and then its ready to serve.

Medicinal/Nutritive value: Quinoa is high in fibre content compared to commonly used grains such as rice, moong dal or wheat.

Ingredients of Garlic Chutney:

Garlic Cloves – 10 to 15

Red chilly powder

Asafoetida (Hing)

Salt – according to taste

Cumin seeds

Oil – 2 tsp

Butter – 2 tsp

Method:

Peel the skin of garlic cloves. In a mixture jar put the garlic cloves, salt, red chilly powder, cumin seeds, Asafoetida and oil. Make a paste of all the ingredients and then add butter. This chutney can be stored in the refrigerator for 5 to 6 days.

Medicinal/Nutritive value: Garlic is helpful in lowering cholesterol levels in the blood.
