Ingredients:
Soyabean flour – 1 cup
Jowar flour – ½ cup
Rice flour – 2 tsp
Oil – 2 tsp
Paste of 2 green chillies
Broth obtained from boiled drumsticks
For Noodles Masala:
Chopped green garlic – 2 tsp
Onion – 1
Spring onion -2
Green chilli – 2
Ginger paste
Black pepper powder
Cabbage – 1 small
Carrot – 1
Capsicum- ½
Method:
Mix the flours well together. Add the chopped green chillies and broth of drumsticks to the flours. Add the salt, oil and knead a stiff dough. Heat water in a large vessel. Place a large ring in the water. Now place a plate with holes over a ring but in a way that it stays above the water. This arrangement is for steaming the noodles. Now use a sev-maker to prepare noodles over the plate. Cover the vessel with a lid. Steam the noodles to cook it for 15 minutes. After 15 minutes remove the lid and separate the noodles. Pour little oil so that they don’t stick together.
Finely chop the cabbage, capsicum and carrots. In a kadai, heat some oil. Add the ginger- green chilly paste. Now add onions and saute. Now add the cabbage, capsicum and carrots and chopped spring onions. Add the black pepper powder and salt and mix well. Saute the vegetables for 2 to 3 minutes and then add the noodles. Serve the noodles hot with tomato ketchup if you wish to.
Medicinal/Nutritive value:
Jowar is low in calories and high in phosphorous content. It is also high in fibre content and very easy to digest. Soyabean is high in protein, phosphorous and calcium content.
