Ingredients:
For the stuffing:
White Sesame seeds – 2 tsp
Dessicated coconut – ¼ cup
Peanuts – 1 cup
Garlic – 4 cloves
Onions – 2
Hing (asafoetida) – ½ tsp
Turmeric powder – ¼ tsp
Red chilli powder – 1 tsp
Oil – 2 tsp
Salt- as per taste
Coriander leaves
Powdered sugar – ½ tsp
Juice of ½ lemon
For the cover:
Besan (gram flour) – 1 cup
Oil – 2 tsp
Turmeric powder – ½ tsp
Red chilli powder – ½ tsp
Hing (asafoetida) – ½ tsp
Jeera (Cumin) powder – ½ tsp
Garlic – 2 cloves
Salt – as per taste
Method:
Roast the peanuts and sesame seeds separately. Heat some oil in a pan and add turmeric and hing. Add the chopped onions and saute till golden brown. Let the onions cools down a bit. Using a mixer grinder, crush the peanuts, sesame seeds and coconut separately. Now crush the garlic cloves. Mix the onions, garlic, peanuts, sesame seeds, coconut, green chillies, turmeric powder, hing, red chilli powder and salt. Keep this mixture aside.
Now for making the cover heat some oil in a kadai. Add cumin seeds, hing and crushed garlic. Now add turmeric powder, red chilli power and salt. Add some water. When the water starts boiling add the besan gradually and keep stirring. If there are lumps formed, you may use a hand blender to make the mixture smooth. Keep stirring the mixture for 4 to 5 minutes. For making the cover, take this mixture and spread it evenly over a damp cloth. Now spread the stuffing evenly over the besan layer. Now press the stuffing smoothly and fold the damp cloth. Seal the besan cover with hands so that the stuffing does not come out. Now gradually remove the cloth from the besan cover. You may apply some oil over your palms before doing so. Cut the vadis in pieces.
Garnish with freshly chopped coriander leaves and dessicated coconut and serve.
